Dahlias are flowering perennial plants indigenous to Mexico. Historically grown as a food source for the edible tubers and flowers, before being cultivated as an ornamental flower.
Grown from tuber or seed, the varieties most used traditionally for cooking are what is now known as the Common Garden Dahlia (D. x pinnata or D. variabilis) and the Red Dahlia (D. coccinea).
There are many varieties of Dahlia that are prized for ornamental beauty, however single petaled Dahlias remain the most easily accessible to bees and other pollinators.

Dahlia tubers are the most substantial and nutritious part of the plant. They can be eaten raw or cooked like other root vegetables. Dahlia flowers are also edible and can be used in salads, drinks, or as a garnish. Dahlia make an excellent vase flower, pick fully open flowers, buds do not open when cut.
