In Japan, immature unopened green soy beans are called edamame.
The plant is a bushy annual legume with fuzzy bean pods that grow in clusters. Each pod contains 2 to 4 seeds that can be eaten young and fresh, or dried and used for soy products such as tofu or soy milk. 90% of soy beans grown in the US are genetically modified so it is preferred to source non GMO seed and grow your own!
This variety – Soybean Sonya – is non-GMO and recognised as an Heirloom from Southeast Asia around 1100 BC.
